Lactobacillus plantarum is a non-pathogenic gram positive and rod shape bacterium that known as a member of Lactobacillus species. Lactobacillus plantarum has reported as a probiotic that had many applications in food industry, but their potential were not fully investigated include the potential as uronic acid source. In this study, the detection of uronic acid and the antimicrobial activity of Lactobacillus plantarum were done. Amazingly, the uronic acid was detected and measured about 0.97mg/ml by using carbazole assay. The antimicrobial activities of Lactobacillus plantarum was shown on Candida albicans (12mm), Salmonella typhi (6.67mm), Staphylococcus aureus (7mm), Staphylococcus sciuri (9mm), Micrococcus luteus (15.67mm), Vibrio harveyi (6mm), Vibrio paraheamolyticus (8.67mm) and Pseudomonas aeruginosa (7.33mm). The temperature also showed the effect on antimicrobial activity of Lactobacillus plantarum. At 37oC the antimicrobial activity was strongest. The CFS from Lactobacillus plantarum was only active at pH 2 to 4 while inactive with pH above 4. The antimicrobial agent was lysed after treated with Trypsin showed that the antimicrobial agent was proteinaceous bacteriocin. This study reported the biological activity of Lactobacillus plantarum as a potential application in pharmaceutical and other fields.en_US
