dc.description.abstractIn this study, the nutritional content of three types of lotus seeds was collected from the Central and Southern regions in Vietnam. In general, among three types, lotus seeds collected from Khanh Hoa contained the highest macronutrient percentage and a large amount of vitamins and minerals. However, the fat percentage of Khanh Hoa lotus seeds was the lowest compared to that of Cao Lanh and Quang Nam lotus seeds, which were 0.92%, 0,.9,7%, and 1.43%, respectively. The percentage of moisture in Cao Lanh lotus seeds was higher than Khanh Hoa and Quang Nam with 12.14%, 9.63%, and 8.10%, respectively. Especially, vitamin A and vitamin D were not detected in all three types of lotus seeds, but vitamin B12 was not detected in Khanh Hoa lotus seeds.en_US
